This is okonomiyaki, the Asian pancake that you definitely have to taste.
If they're talking about Japanese cuisine, people often think about sushi or ramen, but the culinary offer of the land of the rising sun is way more diverse. Last year a donburi restaurant opened in the city, and now okonomiyaki is here. Okonomiyaki is a Japanese savory pancake containing a variety of ingredients. The name is derived from the word okonomi, meaning "how you like" or "what you like", and yaki meaning "cooked" (usually fried). The okonomiyaki is made from flour, eggs, vegetables and the special ingredients of that particular variation. Ingredients are mixed and baked on the „teppanyaki” which is an iron plate. On top of it, they put okonomiyaki sauce (like Worcestershire, but denser and sweeter sauce) and Japanese mayonnaise, and, for example, green onion or arugula.
The new street food place of Budapest, Japan Okonomiyaki Kincsán is situated is Ráday Street, the gastro street of Budapest, and it's a real extravagance, even in that neighborhood. They make four different types of this unique Japanese street food: the classic Kansai-styled version, a more specific one with tofu, a modern „modan-yaki” with mung bean sprouts, and there is a version made with buckwheat for gluten intolerant people. It is worth considering though, that okonomiyaki is not a full meal, rather a snack, that the Japanese people are happy to eat all day. Now we understand why.
